Coffee from the Jarabacoa region of the Dominican Republic is known for its strong body and moderate to light acidity with rich aroma and earthy tones. This coffee tends to exhibit classic Caribbean taste characteristics. The main flavors linked to the acidity are grape and apple, neither fully fermented nor fresh, but somewhere in between. Hints of vanilla and allspice lurk behind the fruit. 

The Dominican Republic's long coffee growing season is extended by the warm and gentle tradewinds and ocean currents which comnine with the moderate climate to allow the coffee cherry to ripen very slowly on the coffee plant, producing a high quality coffee bean. The predominant harvesting season is October through June. The farmers repeatedly return to the fields to hand-pick only the ripest coffee cherries thorughout the harvest.
